PEPSTEAK.TXT D-22 PEPPER STEAK WITH RICE (Leigha) 1 lb beef or venison round steak 1 Tbs paprika cut in thin strips 2 cloves garlic, minced 1 1/2 cups beef broth 1 sliced green onion including tops 2 green peppers, cut in strips 2 Tbs cornstarch 1/2 cup water 1/4 cup soy sauce 2 large fresh tomatoes, cut in 3 cups hot cooked brown rice (1 c eighths uncooked) 1. Sprinkle meat with paprika. Let stand while preparing other ingredients. 2. Brown the meat. 3. Add the garlic and broth. Cover and simmer for 30 minutes. 4. Stir in onion and green pepper. Cover and cook for 5 minutes. 5. Mix the cornstarch, water, and soy sauce. Then stir into tne meat mixture. Cook and stir until thick and clear (about 2 minutes). 6. Add tomatoes and stir gently. 7. Serve over the brown rice. Serves 6. SAMONPAT.TXT QUICK SALMON PATTIES 1 15 - 16 oz can pink salmon 1/2 cup flour 1/3 cup onion, choppped fine 1 egg 1 1/2 tsp baking powder 1. Drain salmon, reserving 2 tablespoons of the liquid. 2. In a medium mixing bowl, mix salmon, egg, and onion until sticky. Stir in the flour. 3. Add baking powder to reserved liquid, then stir mix into salmon mix. 4. Form into patties and fry in hot oil about 5 minutes, until golden brown. Serve with tartar sauce or Ceasar salad dressing.
