CHICRICE.TXT D-8 CHICKEN 'N RICE BAKE (Leigha) 1 rounded cup raw brown rice 1 cup finely chopped celery 1 4 oz can mushrooms 1 10 3/4 oz can cream of mushroom 2 cups chicken broth (homemade soup or from bouillon cubes) 1 1 1/4 oz pk dry onion soup mix 1 cut up chicken or 6 - 8 pieces (reserve 2 tbs) skinned 1. Spread rice, celery, and mushrooms evenly in a 9 X 13 baking dish. 2. Mix soups and chicken broth. Pour over the rice and vegetables. 3. Place Chicken on top of mix, turning once to coat. 4. Sprinkle remaining dry onion soup mix over the chicken. 5. Cover and bake at 350 degrees for 1 to 1 1/4 hours (until rice is cooked (can bake at 275 for 3 - 4 hours). Serves 6 - 8 CHIKRICE.TXT CHICKEN AND RICE CASSEROLE 3 slices bacon cut in thirds 3 pounds of cut up chicken or split 1 1/4 cups rice chicken breast salt and pepper 2 pk onion soup mix 2 cans mushroom soup 3 cups water 1. Preheat oven to 350 degrees. 2. Arrange bacon pieces to cover bottom of a 9 X 13 baking dish. 3. Sprinkle the rice over the bacon. 4. In a bowl, mix onion soup, mushroom soup and water. Pour about half of the mix over the rice. Salt and pepper to taste. 5. Arrange chicken pieces on top of the rice mix. Pour remaining soup mix over the chicken and sprinkle chicken pieces with salt and pepper. 6. Cover with foil and bake for 1 hour and 15 minutes (until chicken is tender and rice is done.
