E-8 FSTARICE.TXT FIESTA RICE 2 Tbs olive oil 1 small green pepper, chopped 1 small onion, chopped 2 cups V8 juice 1 cup picante sauce 1/4 tsp garlic powder 1 cup uncooked long-grain rice 1/2 cup shredded monterey jack or 4 cheese mexican blend cheese 1. Put oil in a 2 qt or larger saucepan. 2. Over medium heat, sautee the onion and pepper until tender. 3. Add the V8, picante, and garlic powder and bring to a boil. 4. Add rice, reduce heat, cover, and cook 15 minutes stirring occasionally. 5. Uncover, and cook 5 minutes more, until rice is tender and liquid is absorbed. 6. Stir in the cheese. SPINCASS.TXT BAKED SPINACH CASSEROLE 2 10 oz pkg frozen chopped 2 eggs, beaten spinach 1/2 tsp salt 1 Tbs all purpose flour 1/8 tsp garlic powder 1/8 tsp pepper 2 tsp lemon juice vegetable oile to oil casserole 1. Heat the oven to 350 degrees. 2. Lightly oil a 1 quart casserole dish. 3. Cook spinach per package directions, but only simmer 3 minutes. Drain the spinach well. 4. Add the flour, seasonings, aand lemon juice to the beaten eggs. Beat with a hand mixer until smooth. 5. Add the spinach and mix well. Turn into the oiled casserole. 6. Bake uncovered for 20 - 25 minutes.
