CHCHCAKE.TXT CHOCOLATE CHIP CAKE (Sherry) 1 cup butter, softened 1 cup packed brown sugar 2/3 cup granulated sugar 4 eggs 2 tsp vanilla extract 2 cups all purpose flour 1/2 tsp salt 1 cup mini chocolate chips 1. Heat oven to 350 degrees. 2. Grease a large pan (Sherry uses a jelly roll pan) and line with waxed paper. 3. In a large bown, cream the butter and sugars. 4. Add the eggs, 1 at a time beating after each. 5. Add the vanilla and beat. 6. Gradually add the flour and salt. Mix well. 7. Stir in the chocolate chips. Spread in the pan. 8. Bake for 20 - 25 minutes. Cool Completely. 9. Loosen the cake and invert on a floured cloth. Peel off the paper and divide into layers (Sherry does 3). FROSTING: NOTE: Use amounts in parenthesis to frost on all sides. Regular amounts to frost between layers and top. 1 cup mini chocolate 3/4 cup butter, softened (1) chips (1 1/3) 1 1/2 cup powdered sugar, 2 tsp vanilla extract (3) sifted (2) 1. Slowly melt chocolate chips over hot water. Stir till smooth. 2. Cream butter and sugar. 3. Add chocolate and vanilla, blending until smooth. Frost.
