CHOCFRCK.TXT CHOCOLATE FRUIT CAKE (Sharon Buchanan) 1 cup butter 6 1 oz squares semi-sweet chocolate 1 1/4 cups sugar 3 large eggs 1 cup all purpose flour 1/4 tsp salt 1 cup red candied cherries, 1 cup green candied pineapple, cut in half cut in half 3/4 cup walnut halves, 3/4 cup pecan halves, chopped large chopped large (or you can use all pecans) 1. Melt butter and chocolate in heavy saucepan over low heat (or microwave). Remove from heat and cool 15 minutes. 2. Stir in the sugar. 3. Add eggs, one at a time, stirring until well blended. 4. Add the flour and salt, stirring until blended. 5. Stir in cherries, piineapple, and nuts. 6. Spoon into 4 greased and floured mini loaf pans. 7. Bake at 350 degrees for 35 minutes. Check with toothpick. 8. Cool 10 minutes, then remove from pan. 9. Seal in heavy duty plastic and refrigerate 8 hours before cutting.
