PBNUTBRD.TXT PINEAPPLE, BANANA NUT BREAD 3 cups all purpose flour 3 cups sugar 1 1/2 tsp salt 1 1/2 tsp baking soda 1 1/2 tsp cinnamon 3 eggs, slightly beaten 1 cup oil 4 medium bananas, mashed 1 8 oz can crushed pineapple 1 cup chopped pecans 1 1/2 tsp vanilla NOTE: If using pineapple in heavy syrup, use only 2 1/2 cups sugar. 1. Preheat oven to 350 degrees. Spray a 4 X 16 pan with PAM and set aside. (You can use 2 loaf pans if you don't have a big one.) 2. Combine the flour, sugar, salt, baking soda, and cinnamon with wire whisk. 3. Add the oil slowly to the beaten eggs while stirring. 4. Add egg mix to dry ingredients. Stir (DO NOT BEAT), while adding the wet to dry . 5. Add bananas, pineapple, pecans, and vanilla. Stir until mixed. 6. Pour into the pan and bake for 1 hour, or until a knife inserted in the middle comes out clean.
