SFSWPPIE.TXT SUGAR FREE SWEET POTATO PIE 2 cups (1 can) mashed yams 1 12oz can evaporated milk 2 eggs, lightly beaten 7 1/4 tsp EQUAL MEASURE or 24 1 TBS margarine, softened packets EQUAL or 1 cup EQUAL 1 TBS all purpose flour SPOONFUL 1 1/2 tsp vanilla 2 tsp cinnamon 3/4 tsp ground nutmeg 1/2 tsp salt 2 regular 9 in pie shells 1. Preheat oven to 425 degrees. 2. Blend all ingredients until smooth (except pie shells), beginning with margarine and yams. 3. Pour into pie shells. 4. Bake at 425 for 20 minutes. Reduce heat to 350 degrees and bake until filling is set and a knife inserted near center comes out clean. About 30 - 35 minutes. 5. Cool on a wire rack and refrigerate until served.
