STUFTAT2.TXT STUFFED BAKED POTATOES 3 large baking potatoes 1/2 cup sliced green onions 1/2 cup margarine, divided 1/2 cup whipping cream 1/2 cup sour cream 1 cup shredded cheddar cheese 1 tsp salt 1/2 tsp white pepper paprika 1. Bake potatoes for 1 hour 20 minutes at 400 degrees (until tender). allow potatoes to cool to the touch. 2. Cut potatoes in half lengthwise. Carefully scoop out pulp leaving a thin shell, placing pulp in a bowl. 3. Saute onions in 1/4 cup margarine until tender. Add onions and margarine to potato pulp. 4. Add cream, sour cream, salt, and pepper. Beat until smooth, then fold in the cheese. 5. Fill the shells with the potato mix. Place in a baking dish. 6. Melt the remaining 1/4 cup margarine and drizzle over the potatoes. Sprinkle with paprika. 7. Bake at 350 degrees for 20 - 30 minute (until heated through). NOTE: Potatoes may be stuffed ahead of time and refrigerated or frozen. Allow additional baking time when this is done.
