SWPOTPIE.TXT SWEET POTATO PIE 1 deep dish pie shell 2 large (1 - 1 1/2 lb) sweet 1/4 cup butter, softened potatoes, cooked and peeled 1 cup sugar 2 eggs 1/4 tsp nutmeg 1/4 tsp salt 1 cup evaporated milk 1. Heat oven to 375 degrees with a cookie sheet in the oven. 2. Beat potatoes, until smooth, mix in butter and sugar. Beat in eggs, one at a time, then mix in the nutmeg, salt, and milk. 3. Put pie crust on the hot cookie sheet and pour in the filling. 4. Bake in center of oven for 60 - 65 minutes (until knife inserted in center comes out clean. Cool.
